I have been obsessed with the Nakd Bars recently, they taste so good and are pretty healthy. I have made homemade Nakd bars before (see here) and I fancied making some more with a bit of a twist. When I was researching alternate recipes I found this one, from Rosannas Kitchen for healthy peanut butter cups. I love peanut butter, and I love nakd bars so smooshing the two together can only be a good thing, right? This recipe is full of good stuff, nothing unhealthy. 

Ingredients:
100g Cashew Nuts
175g Dates
50g Raisins
1tbsp Coco Powder
1 tsp Vanilla Extract
100g Dark Chocolate
Peanut Butter
1tsp Golden/Maple Syrup

Method:

Pop in the cashew nuts into a processor and blend them till they resemble bread crumbs.


Then add in the dates, raisins, syrup, coco powder and vanilla extract, and blend again until it holds it's shape.


Spoon out the mixture into cupcake cakes, I used tiny ones to make they a bite sized treat, and press down to form a base.


Then add around half a teaspoon to a teaspoon worth of peanut butter to the cupcake cases and spread out on the base.


Melt your dark chocolate and then spoon onto each of your 'cups'.



Put them in the fridge for a couple of hours and that's it, dead simple, easy and a healthy treat.
