I love baking, if you can't already tell (check out my recipes here) and mastering the perfect cookie has been something I have been attempting for ages. I feel like I may have found the recipe that makes cookies with the perfect blend of crispy outside and soft inside, so I thought I would share it with you.

You will need:

170g Melted Butter
135g Light Brown Sugar
100g Granulated Sugar
1tsp Vanilla Extract
2 eggs (1 whole and 1 egg yolk)
170g Self Raising Flour
Pinch of Salt
200g M&Ms


Begin by mixing together your butter and both sugars well. You want to do this until all the sugar has dissolved and is mixed in well with the butter.
To this then add your eggs and vanilla extract, again mixing until everything is well combined.
Sift in your flour and salt, mixing well until everything is combined. 
Finally add in your M&Ms and that is the mixture done. 
You then want to chill this, this is a step I used to miss out however I think it is really important as it means the cookies don't spread so much in the oven and go too thin. I left mine overnight, however if you are short for time leave them for at least 2 hours.
Once chilled pre-heat your oven too 170 degrees C and line your baking trays with grease proof paper.
I used a tablespoon to measure out my mixture then i just rolled them into balls and placed 6 on each baking tray. You want to cook them for about 10-12 minutes, then leave to cool on the tray. They will still be very soft when you take them out of the oven so try to resist moving them until they are set.

And that is it, a really simple recipe, but it produces gorgeous cookies everytime!

  1. Cookies that are crunchy on the outside and soft on the inside are my absolute favourite! Not s huge fan of Mnm's but I'd probably swap that out for choc chips in this recipe :)
