These cupcakes were to die for, simply gorgeous. I had never tried red velvet cake before, but I have always wanted to, so I thought I would make some. The cakes didn't come out as red as I wanted, they were more pink, I think this is because I didn't use the correct food dye, however they still looked amazing and tasted even better.

You will need:

175g Butter
450g Caster Sugar
3 Eggs
3 Tbsp Coco Powder
25g Food Colouring
Splash Vanilla Extract
500g Plain Flour
350ml Butter Milk
Tspn Baking Powder


125g Butter
180g Cream Cheese
500g Icing Sugar

Begin by lining your cupcake tray and setting your over to preheat to 180C.

In a large bowl mix together the butter and sugar, do this until they are well combined, fluffy and the mixture has lightened in colour. Then add in your eggs one at a time, mixing well in between.

Add the coco powder, vanilla and food colouring to this mix and combine well.

Then add the flour and buttermilk to this mix, do this in stages. So add in 1/3 of the flour, mix well, 1/3 of the buttermilk and mix well and continue until all of the ingredients are combined. Finally add in the baking powder and mix well.

Then place in your cupcake cases, about 2/3 full and bake for 15 minutes, or until a skewer comes out clean. Leave to cool fully before you frost.

To make the frosting mix the butter and cream cheese together until they are well combined then add the icing sugar in in 1/3 batches. You can then pipe/spread on the cakes.

Such an easy recipe, but it gives such an amazing result! Let me know if you try these.
