I made this coffee loaf at the weekend and I had to share it with you. It is so delicious and moist! I topped mine off with some walnuts however I didn't put them in the cake. To alter this, if you want to include walnuts in the actual batter, just chop up a few and add them at the end, before it goes in the oven. I decided to go for a loaf, I'm not really sure why I just fancied it. If you do go for a loaf tin then towards the last 10/15 minutes of baking you might want to pop some tin foil over the cake to prevent the top from browning too much. If you go for a round cake tine you will need to adjust your baking time as it will be much shallower and will take less time to cook through.
180g Butter
180g Brown Sugar
200g Self-Raising Flour
3 Eggs
2 Tbsp Instant Coffee
Splash of Vanilla Extract

155g Icing Sugar
3 Tbsp Instant Coffee
3 Tbsp Milk
A few Walnuts for decoration *optional*

Begin by heating the over to 170 degrees celcius and lining your tin.
Dissolve the coffee with some boiling water, I used about 20mls and leave to cool.
Now beat together the butter and sugar until they are light and fluffy and well combined.
Add one egg at a time, with each egg add 10g of flour to prevent the egg from curdling.
Fold in the remaining 170g flour.
Mix in the coffee and vanilla extract.
Bake for 35-45 minutes, just make sure a skewer comes out clean when you take it out of the oven.

For the icing dissolve the instant coffee in the milk, which you should heat up first.
Once all the coffee is dissolved add in the icing sugar, do it in parts so you can get the consistency you are looking for.
Then drizzle over the cooled cake and add any toppings.
